At Herb & Sea, celebrated Chef Brian Malarkey combines his culinary expertise and lifelong love of the sea into a wood-fired, coastal-inspired destination that feels like home. He is joined by Executive Chef and Partner, Sara Harris, whose signature style and years of collaborating with Malarkey shine through the farm-to-table menu, masterfully highlighting the fresh flavors of local purveyors.
When it was time to build their dream kitchen for Herb & Sea, they told our team at Hestan Commercial they wanted a kitchen that would be easy on the eyes, functional, powerful and most importantly – reliable. As you can see, our team created this custom kitchen with surgical precision and it really shows in the finished product.
We connected with with Chef Sara Harris to learn more about the inspiration behind their award-winning restaurant.
What inspired the cuisine and design at Herb and Sea?
The menu at Herb & Sea is inspired by the coast and local, seasonal ingredients. We introduce bright, balanced flavors expertly crafted with creativity and purpose. Our menu represents East Coast meets West Coast seafood-forward dishes, inspired by classic dishes, re-inspired with local produce and California flavors. From fresh seafood and raw bar classics, to wood-fired pizzas and house-made pastas, we invite all to savor in the best of coastal cuisine.
What is your favorite feature of your Hestan appliances?
It’s hard not to say my favorite feature is the custom Bora Bora paint with all brass features and finishes. It is truly the most beautiful line I’ve ever seen! It is definitely a show piece in our open kitchen. The customer service has been awesome since we had our Hestan installed. With any well-loved, well-used equipment, repairs and maintenance is a given. Hestan has gone above and beyond with their customer service.
How does the level of craftsmanship stack up to your culinary standards?
As far as functionality, we love the fluidity of the entire line, and are able to make beautiful food, fast and efficiently. We love the pasta as well, it was a game changer for the overall function of the line. Ultimately what we love about our Hestan is how we are able to execute a relatively large menu with a small, but very efficient line. It’s the little things that matter for us – how easy it is to break down and clean the appliances at night, being able to see the pilot light through a convenient clear window rather than laying on the floor with stick lighter (every chef has been there).
