When Chef Josh Feathers began developing the culinary program, his goal was to reflect the beautiful, plentiful and mindful natural setting of the Great Smoky Mountain property. He calls it “thoughtful indulgence.”
And when it came time to spec the kitchen of his Three Sisters restaurant, he chose the thoughtful innovation of Hestan Commercial. He relies on the precision performance to create his impeccably crafted menu for breakfast, lunch and dinner. What’s more, Blackberry Mountain guests get the opportunity to cook with Hestan Indoor products in the resort’s demonstration kitchen.
We recently spoke with Chef Feathers about his Hestan kitchen and the cuisine at Three Sisters.
Tell us about the cuisine at Blackberry Mountain.
Our cuisine is meant to be something that fuels you for an active day on the mountain with a rewarding end. Dishes range from healthful and vegetable-forward to indulgent.
What is your favorite thing to cook at Three Sisters?
Personally, it’s wild game. It couples full flavor with very lean protein – perfect for a full day on the mountain.
How does the level of craftsmanship in your Hestan appliances stack up to your culinary standards?
The work that went into these appliances helped make the launch of Blackberry Mountain a success. We depend on these units to enable our kitchen team to produce great food for our guests on a daily basis.
What is your favorite product or feature of Hestan appliances?
The double-hinged hydraulic doors on the ovens.
How has Hestan improved the efficiency and/or performance of your kitchen?
We run a clean ship. Hestan’s design makes it easy to quickly disassemble the line for cleaning and breakdown following service.
How do you think Hestan is changing the game in the restaurant industry?
I’m impressed by the ways Hestan has thought outside of the box with their design and the functionality of the products.
